Chocolate Adventure #3 - DIY Chocolate

I was inspired to practice some of my new Chocolate molding skills at home after attending the Basic and Advanced Chocolate Molding Class at The Castle of Baking and Confectionery Arts last weekend. 

I went back today to buy some Bon Bon Molds, Chocolate Lollipop Molds, Belcolade Couverture Chocolate and Premium White Chocolate. 



I brushed up on my molding and drizzling skills with the help of my little assistants.




I also experimented on some Dark Chocolate flavored with Peppermint Oil. It turned out well because eating them reminded me of Andes Chocolate Mints. 



I can't wait to attend more advanced Chocolate Classes ...

Chocolate Adventure #2: Chocolate Class

I've taken my love for chocolate to the next level by enrolling in my first Basic and Advanced Chocolate Molding Class at The Castle of Baking and Confectionery Arts in Cubao, QC. You can't miss it, the School and Baking Supply Shop is a landmark in Quezon City because the building is an actual Castle. 

The day started with an Introduction to Chocolate by Chief Instructor Chef Christine Paredes. Chefs are my rock stars and Chef Christine being a Chocolatier who studied at the Culinary Institute of America definitely got my attention. What could be better than working with Chocolate everyday? 



Chef Christine demonstrated chocolate tempering and molding with tips on proper storage, marketing and costing. The class was quite informative and comprehensive. I would recommend this class to beginners and hobbyists like me and entrepreneurs wanting to start a chocolate business.


First up, Chocolate Lollipops of every color, shape and size ... 



Peppermint Squares, Chocolate Cornflake Clusters, Roasted Almond Bonbons and Decadent Truffles soon followed ... 




Chef Christine also showed us how to make a whimsical Chocolate House and Treasure Chest ... 


Did I forget to mention the best part of this class is all the FREE chocolate being distributed after each demonstration ... YUM! 


After the lecture and demo, it was our turn to churn out some chocolate creations ...
